Crunchy Granola

With December upon us, ‘tis the time for giving!  This is one of my favorite times of the year. So, whether you celebrate Hanukah or Christmas, here are great ideas for the Crunchy Granolanext several blogs to help you celebrate and give in a healthy way and on a budget!  Enjoy each and every idea and know that giving can happen all year long!

Crunchy Granola

This is so easy to make and it looks beautiful in bags, glass containers or in tins.  Great eaten alone, sprinkled on yogurt or used in cookies!

  • 2 c. rolled oats
  • ½ c. flour (can be regular, spelt, almond, coconut, etc)
  • ¼ c. sunflower seeds
  • 2 TBL chopped almonds
  • 2 TBL chopped pecans
  • 1/8 tsp, salt, optional
  • ½ tsp. cinnamon
  • ¼ tsp. nutmeg
  • 1/3 c. maple syrup
  • 1/3 c. oil (can be olive, grapeseed or melted coconut)
  • 1 T. vanilla

Mix dry ingredients together.  Mix liquid ingredients and then stir together.  Spread on oiled jell- roll pan (cookie sheet with sides).  Bake at 325 degrees for 20 -30 minutes, stirring every 10 minutes.  Cool and store.

Makes about 1 quart.  Can be doubled or tripled easily!

Note:  For those of you using a favorite protein shake mix, you could add ½ o ¾ cup of dry shake mix to the oats and reduce maple syrup to ¼ cup.  This would increase the protein and make it taste awesome!
