Grilled Chili Lime Chicken
Some of the best recipe ideas seem to come together on those days when a trip to the grocery store is long overdue. This is one such recipe for me, and the best part is how easy it is. I scoured the pantry, the fruit basket, the refrigerator and came up with this bit of deliciousness. So fire up the grill and let’s get cooking!
What you need:
- 4 boneless, skinless, chicken thighs
- 1 can diced green chilis
- 3 cloves garlic – pressed
- 1/2 tbsp chili powder
- 1 tsp sea salt
- 1 tsp black pepper
- juice of 1 lime
First, fire up your grill and let it get heated up.
Place the chicken on a plate to prep. Sprinkle the chili powder, salt, and pepper on each side. Then coat it with half of the diced chilis and all the garlic. Cut the lime in half and squeeze the juice over the chicken. Set the other half aside.
Throw the chicken on the grill and flip it when needed. I ended up cooking each side for about 7 minutes.
When it’s done set it aside on a plate and top with the rest of the chilis. Squeeze the other half of the lime over the chicken.
